In Burgundy’s northern region of Chablis, a combination of climate, tradition, and unparalleled kimmeridgian limestone soils (packed with old sea fossils) make for some of the most mineral driven, focused Chardonnays on the planet. The Savary family has a long tradition of making wine that was interrupted by one generation. However, Olivier and his wife Francine resumed this family tradition in 1984 despite having lost the family vine holdings when his parents sold. Before long, his talent was discovered and shared with the world.
